Feature Recipe Idea: Grilled Zucchini pasta salad
Ingredients
4 medium zucchini, halved lengthwise
4 ears corn, husks and silks removed
2 TB neutral oil like olive or avocado
½ tsp kosher salt
½ tsp ground pepper
½ c torn basil leaves
4 TB shaved pecorino cheese, or parmesan cheese
Dressing
2 TB olive oil
1 whole lemon, zested and juiced
1 clove garlic, minced
1 tsp honey
Instructions:
Whisk olive oil, lemon juice, zest, garlic, and honey.
Brush zucchini and corn cobs with oil, season with salt and pepper, then grill for 10–12 minutes total at 350–375°F. turning occasionally, until tender and lightly charred.
Dice zucchini and cut corn from the cob. Toss with dressing, basil, and cheese.
