• ¾ cup unsalted butter softened

• 1 cup granulated sugar

• 1 large egg

• ¼ cup molasses unsulphured

• 2 ½ cups all-purpose flour

• 2 tsp baking soda

• ½ tsp salt

• 1 tsp cinnamon (if you like a strong cinnamon flavor, increase to 2 tsp total)

• ½ tsp dried ground ginger (if you like a strong ginger flavor, increase to 1-2 tsp total)

1. Preheat the oven to 350°F.

2. In a large bowl, cream together the butter and sugar until light and fluffy, about 2–3 minutes with an electric mixer. Add the egg and molasses, mixing until fully combined.

3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and ginger. Gradually add the dry ingredients to the wet ingredients, mixing until well incorporated.

4. Form or scoop dough into balls slightly smaller than a golf ball. If desired, roll each ball in granulated sugar. Place the dough balls on a baking sheet, spacing them 2–3 inches apart to allow for spreading.

5. Bake for 10–12 minutes, then remove from the oven and let the cookies cool on the baking sheet for about 10 minutes. Transfer to a wire rack to finish cooling completely.
