Feature Recipe Idea: Mexican street corn salad
Ingredients
4 ears corn + olive oil
1½ tbsp mayo
1 garlic clove minced
1 lime (zest + juice)
⅓ cup diced scallions
¼ cup crumbled Cotija cheese
¼ cup chopped cilantro
¼ tsp chili powder
1 seeded/diced jalapeño
¼ tsp salt and pepper to taste
Instructions:
Grill oiled corn on medium-high ~2 min per side until charred. Cut off kernels and toss with mayo, garlic, lime, and scallions. Stir in remaining ingredients, season, and serve or chill.
