FEATURE RECIPE IDEA: TOMATO ZUCCHINI PASTA
INGREDIENTS
8 oz short pasta (penne, fusilli or farfalle)
2 lbs zucchini (chopped in bite-sized pieces)
1 lb grape tomatoes or cherry tomatoes (cut in halves)
3 tbsp extra virgin olive oil
6 garlic cloves, minced
1/3 cup grated Parmesan cheese
1/2 cup basil, finely chopped
1 tsp salt
Ground black pepper, to taste. Optional: Red pepper flakes.
INSTRUCTION:
Cook pasta according to package directions, reducing the cooking time by 1-2 minutes so it's al dente. Save 1/2 cup of starchy pasta water before draining. Meanwhile, heat 1 tbsp oil in a large nonstick skillet over medium-high heat. Cook zucchini for 5 minutes, stirring occasionally; transfer to a bowl. Add another 1 tbsp oil to the skillet, cook tomatoes for 3 minutes, then stir in garlic and cook for 1 minute. Remove from heat and toss with the cooked pasta, zucchini, remaining 1 tbsp oil, salt, pepper, cheese, basil, and reserved pasta water. Adjust seasoning to taste and serve.
