  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and ginger. Gradually add the dry ingredients to the wet ingredients, mixing until well incorporated.

  4. Form or scoop dough into balls slightly smaller than a golf ball. If desired, roll each ball in granulated sugar. Place the dough balls on a baking sheet, spacing them 2–3 inches apart to allow for spreading.

  5. Bake for 10–12 minutes, then remove from the oven and let the cookies cool on the baking sheet for about 10 minutes. Transfer to a wire rack to finish cooling completely.
