Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 1 medium yellow onion, chopped

  • 3/4 teaspoon salt

  • Freshly ground black pepper

  • 2 cups cubed butternut squash, ¼-inch cubes

  • 2 garlic cloves, minced

  • 1 teaspoon minced rosemary or sage

  • 1 cup uncooked Arborio rice

  • ½ cup dry white wine

  • 4 cups vegetable broth

  • Optional for garnish: Chopped parsley or small sage leaves, and ½ cup grated pecorino or Parmesan cheese

Instructions:

Heat oil in a large skillet over medium. Add onion, salt, and pepper; cook 2–3 minutes. Add butternut squash; cook 6–8 minutes.

  1. Add garlic, rosemary, and rice. Stir and cook 1 minute. Add wine and cook 1–3 minutes, until reduced.

  2. Add broth ¾ cup at a time, stirring continuously and allowing each addition to absorb before adding more. Cook until squash is tender, and risotto is soft and creamy. Season with more salt to taste.

  3. Garnish with parsley or sage and serve with grated cheese, if desired.
